Easy Homemade Oreos
Use the topping to make homemade chocolate sandwich cookies, as a dip for fruit, or as frosting for cupcakes. The recipe does make more than you’d need for a box of chocolate wafer cookies, but I promise these are some leftovers you’ll love to come back to!

Instructions
  1. Using a stand mixer with whisk attachment, whip together cheese, cream and sugar until firm peaks form.
  2. Using a spatula*, spread one (or more) tablespoons of the cream mixture on to one chocolate wafer cookie. Top with another wafer cookie.
  3. Store assembled cookies in an air-tight container or plate with plastic wrap in the fridge for 4-8 hours.
Recipe Notes
  1. *If you want to get fancy, I suppose you could use a pastry bag here instead, but I say it’s not worth all the trouble.
  2. Cookies get crumbly after too much time in the fridge. Don’t assemble too far in advance.
